meal plan . . .

I had a few minutes this morning so I did our meal planning for the week.  Surprisingly no one was in the kitchen so I laid out each recipe by day.  I checked our calendar to make sure I had enough time each day to cook that days recipe.  Sometimes when I am really 'on it' I check the weather to see if the weather matches my recipe.  I did not do that this week . . . MONDAY:  Pesto Rice & Corn Salad

TUESDAY:  Chicken Okra Stew & Tomato Salad

WEDNESDAY (date night):  Snack Plate

THURSDAY:  Butternut Squash Bake & Green Salad

FRIDAY:  Turkey Enchilada Bake & Green Salad

SATURDAY: Sausage, Tomato, Arugula Pasta & Green Salad

SUNDAY: go out for dinner

Tuesday - CHICKEN AND OKRA STEW (serves 6) - from Cooking Light

Tuesday - Tomato Salad (serves 8)

  • 4 tablespoons olive oil
  • 3 tablespoons of fresh lemon juice
  • 1 teaspoon paprika
  • 3/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 1 3/4 pound heirloom tomatoes
  • 3/4 pound cherry tomatoes, halved
  • 1 small bunch of watercress
  • 1/2 head radicchio, torn into bite size pieces
  • 2 ounces crumbled blue cheese

In a small bowl whisk together first 6 ingredients for the dressing.  Toss 2 tablespoons of the dressing with the watercress and radiccchio.  Toss the rest of the dressing with the tomatoes.  Mix all together.

 

Wednesday - Snack Plate

Find a yummy combination of foods in your kitchen.  Here is an example of what I will be serving.

  • sprite Melon, chopped up
  • peanuts
  • sliced cheese
  • crackers
  • carrots
  • celery

I plate it all up and serve.  Very simply and nutritious!
