I had a few minutes this morning so I did our meal planning for the week. Surprisingly no one was in the kitchen so I laid out each recipe by day. I checked our calendar to make sure I had enough time each day to cook that days recipe. Sometimes when I am really 'on it' I check the weather to see if the weather matches my recipe. I did not do that this week . . . MONDAY: Pesto Rice & Corn Salad
TUESDAY: Chicken Okra Stew & Tomato Salad
WEDNESDAY (date night): Snack Plate
THURSDAY: Butternut Squash Bake & Green Salad
FRIDAY: Turkey Enchilada Bake & Green Salad
SATURDAY: Sausage, Tomato, Arugula Pasta & Green Salad
SUNDAY: go out for dinner
Here are the recipes I will be cooking.
Monday - PESTO RICE - This will be my first time cooking this. If you try it, let me know what you think!
Monday - CORN SALAD (makes 4 servings) - from Country Living September 2013
