Recipe . . .

So our week has continued with meal planning, as usual. I started marinating the chicken (which I chopped up very small before marinating) on Tuesday for our pasta salad on Wednesday.  Here's the recipe.  I was wingin' it as I went along. INGREDIENTS:  1# of your favorite pasta noodles, 1# of chicken* (cut into tiny pieces and marinated in your favorite italian dressing),  one HUGE tomato, 1/2 c. fresh basil, 1/2 c. fresh spinach, 3 cloves of garlic, 1/4 c. of parm, 1/4 c. olive oil, 1-2 grated carrots, 8 oz. of quartered grape tomatos and 8 oz. of fresh mozzarella**.

-cook your pasta according the package directions.

-cook your chicken until done and then CRANK up the heat and brown the outside of the chicken.

-in a food processor or blender blend all vegetables (excluding the grape tomatoes and grated carrots), plus 1/4 cup olive oil, blend until smooth.

When all the ingredients are cool, mix then together in a large bowl and add the grape tomatoes and grated carrots (this is to add nutrition and color to your salad).  This is a lot of food, so look forward to lots of leftovers.  The kids ate this for dinner Wednesday night and we had so much leftover, we had a friend and her kids over for dinner Thursday night.  This meant we skipped our meal plan for Thursday night.

* if you are vegetarian choose any meat substitute for the chicken.

** if you are vegan, replace the chicken and mozzarella with vegan friendly substitutes.
