Pumpkin Muffins . . . so easy.

So tonight I followed my menu plan as planned, BLT's and potato salad.  Actually I got my sweet husband on board.  Last night he cooked up 1.5 pounds of bacon while I sliced, diced and cooked the potatoes.  As expected the BLT's were amazing!  I didn't re-invent the wheel here, just regular old BLT's, but they were just soooo good and the kiddos gobbled them up.  The potato salad was pretty good to, but not great so I won't bother you with the recipe.  Instead I am going to post a recipe that was tucked away on my blog in hopes that you all will give these muffins a whirl.  They are delicious and easy! HEALTHY SIMPLE PUMPKIN MUFFINS Heat oven to 425 degrees

1 box of yellow cake mix 1 can of pumpkin 1/3 cup of water OPTIONAL HEALTHY ADDITIONS: hemp seeds, raisins, slivered almonds, cranberries, flax seed, wheat germ, oatmeal, pecans, pine nuts. Add 1/3 to 1/2 a cup. non-stick spray

Blend all ingredients together. Spray 12-18 muffin pan with non-stick spray. Pour batter to fill muffin pan half way. Bake 18-22 minutes. Enjoy!

I also started dinner for tomorrow night and the next night.  I sliced and diced up raw chicken and have it marinating in some yummy italian dressing.
